can we change the color of the flames coming out of the engines on Android? I have the impression that it is very limited on a smartphone

I believe you can do that in the planet’s file, in post processing. I saw a video on YT about that.

No you can't. Smartphone or PC, the game is the same and the flame colours are pre-determined by reality.

There is a solution, but that has a huge drawback: you can tweak the hueshift in the postprocessing section of a planet file. The problem is that it will modify the hue of everything, not just the flame.

Here is for example a green flame:
