This is a tutorial on how to make your fairings stay where they are. It is a short process, but you can do very nice designs with them.
1) The problem

Right...
So to fix that, put a structural part in place of the desired part and launch.

BUT that's not the part you want. So now go back to build, and reinstall the proper piece.

In all seriousness though, to my knowledge, fairings "stick" to pieces placed/built after them. Whereas if the fairing was the last piece placed, it will release properly. That's what makes this radar array possible. (sat dish design not originally mine)

In this case, the fuel tank was placed last.
Then I just "clear debris" to get rid of the other pieces.
