And before anyone says anything, yes I'm aware that a VEEGA route is much more efficient and my rocket is overkill. I didn't want the video to be 2 hours long.

I know you said no gravity assists for this video, however I want to link a more efficient way to get captured into Jupiter orbit, just because it's pretty cool:
bi-elliptic transfer for capture + moon gravity assists for orbit reducing.
The bi-elliptic transfer's very interesting, basically aim for a very low flyby of Jupiter, do your capture burn there to take advantage of Jupiter's massive oberth effect.
But you only burn just enough to be captured, with a very very high apoapsis.
Timewarp to your very high apoapsis, and burn from there to raise your periapsis to the orbit of whatever moon you want to go to.
Saves a lot of fuel on capture.
