I'll get straight to the point: is there any way I can stack heat shields so my probe won't burn up immediately after entering Jupiter's atmosphere, or do I have to decelerate a lot?

That's a whole problem, heat shields are not balanced to withstand a reentry on Jupiter. Unfortunately you'll have to decelerate by your own means first, because at 10 km/s your heat shields will burn at an extremely high rate.

That's a good challenge idea by the way... :rolleyes:
