You could ask people to build custom payloads then you have to design a rocket to launch the payload to the chosen location(LEO, Mars, Etc).

Make a Lunar or Mars Space Station, observatory satellite on elliptical Solar Orbit, build a rocket replica, there's plenty of things to do in SFS.
