Here's the Delta IV-H I use for pretty much everything.

Remove the side boosters and you've got yourself a IV-M.

That particular setup will get 35 tons to Mars or Venus. The first stage will get that load past the Karman line, the second will push it to a Martian or Venetian orbit and have a little fuel leftover.

I haven't checked the numbers in any detail. Because of my subpar advance Mathematics ability, I tend to build through trial and error.
